  • 3 large eggs, room temperature
  • 1/2 cup dulce de leche
  • 2 teaspoons vanilla extract
  • 2/3 cup dulce de leche (for topping)
  • 35 tablespoons heavy cream (as needed)
  • Fleur de sel or flaky sea salt, for sprinkling

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the dulce de leche and vanilla extract until fully incorporated.
  7. Pour the cheesecake filling over the crust and spread evenly.
  8. Bake for 30-35 minutes or until the center is set and slightly jiggles.
  9. Remove from the oven and let cool completely.
  10. For the topping, mix the dulce de leche with heavy cream until smooth and drizzle over the cooled cheesecake.
  11. Sprinkle with fleur de sel or flaky sea salt before serving.
