Ingredients
Scale
1 whole double-smoked ham (about 8–10 pounds)
1 cup brown sugar
1/2 cup honey
1/4 cup Dijon mustard
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon ground cloves
Instructions
Preheat your oven to 325°F (165°C).
In a bowl, mix together brown sugar, honey, Dijon mustard, black pepper, garlic powder, onion powder, and ground cloves to create a glaze.
Score the surface of the ham in a diamond pattern.
Brush the glaze generously over the ham.
Place the ham in a roasting pan and cover it loosely with aluminum foil.
Bake in the preheated oven for about 1.5 to 2 hours, basting every 30 minutes with the remaining glaze.
Remove the foil for the last 30 minutes of cooking to allow the glaze to caramelize.
Once done, let the ham rest for 15 minutes before slicing and serving.
Notes
For a more intense flavor, consider using a wood smoker for additional smoking after baking.
Leftover ham can be used in sandwiches, salads, or soups.
Adjust the sweetness of the glaze according to your preference.
