Ingredients

  • 3 pounds frozen meatballs
  • 1 20-ounce can pineapple chunks, drained
  • 2 cups BBQ sauce
  • ¼ cup soy sauce
  • ¼ cup rice wine vinegar
  • ¼ cup brown sugar
  • 1 tablespoon fresh grated ginger
  • 3 cloves garlic, grated
  • 2 tablespoons chopped chives, for garnish

Instructions

  1. To the bowl of a crock pot, add frozen meatballs and pineapple chunks.
  2. In a medium-sized bowl, whisk together BBQ sauce, soy sauce, rice wine vinegar, and brown sugar.
  3. Using a micro-plane, grate ginger and garlic, and whisk into the sauce.
  4. Pour the sauce over the meatballs, then gently toss to coat. Cover the crock pot with the lid.
  5. Set the crock pot to HIGH for 2-3 hours or LOW for 5-6 hours.
  6. Once done, sprinkle the meatballs with chopped chives and serve.

Notes

  • For a spicier kick, add red pepper flakes to the sauce.
  • Serve with rice or noodles for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
