600 g (1 lb 5 oz) boneless, skinless chicken breast or chicken thigh, cut into bite-sized pieces
1 tsp sweet paprika
1 tsp garlic powder
½ tsp sea salt flakes
½ tsp cracked black pepper
1 egg
½ cup (60 g) cornflour (cornstarch)
Oil, for frying
1 tsp freshly minced garlic
1 tsp freshly minced ginger
½ cup (125 ml) sweet chilli sauce
¼ cup (60 ml) tamari or all-purpose soy sauce
¼ cup (60 ml) rice wine vinegar, plain white vinegar, apple cider vinegar or lime juice
Steamed rice, for serving
1 spring onion (scallion), finely sliced, for garnish
1 tsp sesame seeds, for garnish
Instructions
In a bowl, combine the chicken pieces with sweet paprika, garlic powder, sea salt, and cracked black pepper.
Add the egg and cornflour to the chicken mixture, and mix until well coated.
Heat oil in a frying pan over medium-high heat.
Fry the chicken pieces in batches until golden brown and crispy, then remove and drain on paper towels.
In a separate saucepan, heat a little oil and sauté the minced garlic and ginger until fragrant.
Add the sweet chilli sauce, tamari or soy sauce, and vinegar to the pan, stirring to combine.
Once the sauce is heated through, add the fried chicken pieces and toss to coat.
Serve the crispy sweet chilli chicken over steamed rice, garnished with sliced spring onion and sesame seeds.
Notes
For frying, use a neutral oil with a high smoke point, such as vegetable or canola oil.
Adjust the sweetness of the sauce by adding more or less sweet chilli sauce according to your taste.
