  • 1 cup cooked chestnuts, peeled and chopped

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 240ml heavy cream or plant-based cream alternative
  • 120ml chicken or vegetable broth
  • 33g grated Parmesan cheese or non-dairy cheese
  • 1 teaspoon fresh thyme leaves or 0.5 teaspoon dried thyme
  • 0.5 teaspoon ground nutmeg (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley or sage leaves (optional, for garnish)
  • Toasted pine nuts or chopped walnuts (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the butter and olive oil over medium heat.
  3. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
  4. Stir in the chopped chestnuts and cook for a few minutes.
  5. Pour in the heavy cream and broth, stirring to combine.
  6. Add the grated cheese, thyme, nutmeg (if using), salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
  7. Toss the cooked pasta in the sauce until well coated.
  8. Serve hot, garnished with fresh herbs and nuts if desired.
