Ingredients

  • Nonstick cooking spray, for greasing mini muffin tin
  • 180 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 60 grams unsalted butter, melted
  • 50 grams granulated sugar
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 120 millilitres unsweetened applesauce
  • 1.5 cups finely diced Honeycrisp or Gala apples (approximately 2 medium apples)
  • 240 grams powdered sugar (for glaze)
  • 100 millilitres apple cider or apple juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin with nonstick cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. In another bowl, mix the melted butter, granulated sugar, egg, vanilla extract, and applesauce until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the diced apples gently.
  6. Fill each muffin cup with the batter, about 2/3 full.
  7. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  8. While the fritters are baking, prepare the glaze by whisking together the powdered sugar and apple cider until smooth.
  9. Once the fritters are done, let them cool slightly before dipping them in the glaze.
  10. Serve warm and enjoy!

Notes

  • For a richer flavor, you can add a pinch of nutmeg to the batter.
  • These fritters are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
