Instructions

  1. Roast the poblano peppers over an open flame until charred, then place them in a plastic bag to steam for 10 minutes.
  2. Peel the skin off the peppers, remove the seeds, and chop them into bite-sized pieces.
  3. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the chopped peppers, vegetable broth, diced tomatoes, cumin, chili powder, salt, and pepper to the pot.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Stir in the shredded cheese until melted and well combined.
  7. Serve hot, garnished with fresh cilantro.
