  • 2 cloves garlic, minced
  • 1 jalapeño, chopped
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup corn (fresh or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1 cup tortilla strips
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and jalapeño; sauté until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Reduce heat and let simmer for 20 minutes.
  6. Stir in corn and black beans; cook for an additional 5 minutes.
  7. Serve hot, topped with diced avocado, tortilla strips, and fresh cilantro.
  8. Garnish with lime wedges before serving.

Notes

  • For a spicier soup, add more jalapeños or a dash of hot sauce.
