  • 2 pounds chicken breasts
  • ¼ cup all-purpose flour
  • ¼ cup olive oil
  • 3 tablespoons butter
  • 1 medium shallot, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons capers
  • ½ cup dry white wine
  • ½ teaspoon chicken base or bouillon
  • 3 tablespoons lemon juice
  • ¼ cup chopped fresh parsley
  • ½ lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  3. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, add the shallot and garlic, sautéing until softened.
  5. Stir in the capers, white wine, chicken base, and lemon juice, scraping up any browned bits from the bottom of the pan.
  6. Return the chicken to the skillet and simmer for about 5 minutes, allowing the flavors to meld.
  7. Finish with the remaining butter and sprinkle with fresh parsley before serving.
