1 lb chicken breast, diced
1 cup barley
4 cups chicken broth
1 onion, chopped
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
1 tsp thyme
1 bay leaf
Salt and pepper to taste
Instructions
In a large pot, heat some oil over medium heat and sauté the onion, carrots, and celery until softened.
Add the garlic and cook for another minute.
Stir in the diced chicken and cook until browned.
Add the barley, chicken broth, thyme, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the barley is tender.
Remove the bay leaf before serving.
Notes
This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
