Ingredients

  • 1 cup long-grain white rice
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup corn (frozen or canned)
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef or turkey over medium heat.
  2. Drain excess fat and stir in the taco seasoning.
  3. Add the rice, diced tomatoes, and beef broth to the skillet.
  4. Bring to a boil, then reduce heat to low and cover. Cook for about 20 minutes or until rice is tender.
  5. Stir in corn and half of the cheese, mixing well.
  6. Top with remaining cheese and cover until melted.
  7. Garnish with chopped green onions before serving.
