2 pounds of baby potatoes
1 packet of ranch seasoning mix
1 cup of shredded cheddar cheese
1/2 cup of sour cream
1/4 cup of olive oil
Salt and pepper to taste
Chopped green onions for garnish
Instructions
Preheat your oven to 400°F (200°C).
Wash and cut the baby potatoes in half.
In a large bowl, combine the olive oil, ranch seasoning, salt, and pepper.
Add the potatoes to the bowl and toss until they are well coated.
Spread the potatoes on a baking sheet in a single layer.
Bake for 25-30 minutes or until the potatoes are tender and golden brown.
Remove from the oven and sprinkle the shredded cheddar cheese on top.
Return to the oven for an additional 5 minutes, or until the cheese is melted.
Drizzle with sour cream and garnish with chopped green onions before serving.
Notes
For a spicier version, add some cayenne pepper to the ranch seasoning mix.
