Ingredients

  • 8 slices thick-cut brioche bread or Texas toast
  • 6 ounces sharp cheddar cheese, sliced
  • 4 ounces Monterey Jack cheese, sliced
  • 4 ounces Provolone cheese or processed cheese, sliced
  • 8 strips bacon
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup ranch dressing
  • Sliced jalapeños, to taste (optional)
  • Caramelized onions, optional

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread softened butter on one side of each slice of bread.
  3. On the unbuttered side of four slices, layer the cheddar, Monterey Jack, and Provolone cheese.
  4. Add the cooked bacon strips on top of the cheese.
  5. Drizzle ranch dressing over the bacon.
  6. If desired, add sliced jalapeños and caramelized onions.
  7. Top with the remaining slices of bread, buttered side up.
  8. Grill the sandwiches for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
  9. Remove from heat, slice, and serve warm.
