1 cup pumpkin puree
1/2 cup maple syrup
1/2 cup vegetable oil
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup chopped nuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, mix together the pumpkin puree, maple syrup, vegetable oil, and eggs until well combined.
In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
If using, fold in the chopped nuts.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

This bread can be frozen for up to 3 months; wrap tightly in plastic wrap and foil.
For a sweeter bread, increase the maple syrup by 1/4 cup.
