Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 4 large onions, sliced
  • 3 cups Belgian beer (preferably a dark ale)
  • 2 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sliced onions and cook until caramelized, about 10-15 minutes.
  3. Remove the onions and set aside. In the same pot, brown the beef cubes on all sides.
  4. Add the garlic and cook for another minute.
  5. Stir in the beer, brown sugar, mustard, bay leaves, thyme, and the caramelized onions.
  6. Bring to a simmer, cover, and cook on low heat for 2-3 hours until the beef is tender.
  7. Season with salt and pepper to taste before serving.

Notes

  • Serve with crusty bread or fries for a complete meal.
  • For a richer flavor, use a dark Belgian beer.
  • This dish can be made a day in advance as the flavors improve overnight.
