2 pounds (900g) chicken tenderloins or chicken breast cut into strips
2 cups (480ml) buttermilk
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for heat)
2 cups (250g) all-purpose flour
1 tablespoon cornstarch
2 teaspoons salt
1 teaspoon black pepper

1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
4–6 cups vegetable oil or peanut oil (enough for 2–3 inches depth)
Instructions
In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. Add the chicken and ensure it is well coated. Cover and refrigerate for at least 2 hours or overnight.
In another bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, smoked paprika, dried thyme, dried oregano, and cayenne pepper.
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the seasoned flour mixture, ensuring it is fully coated.
Carefully place the coated chicken tenders in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 5-7 minutes per batch.
Remove the chicken tenders from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve hot with your favorite dipping sauce.
Notes
For extra flavor, marinate the chicken overnight.
Adjust the cayenne pepper according to your heat preference.
