Ingredients

  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas

Instructions

  1. In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add the diced bell peppers and tomatoes, cooking until softened.
  3. In a bowl, whisk the eggs and season with salt and pepper.
  4. Pour the eggs into the skillet with the vegetables and cook, stirring gently, until the eggs are scrambled and cooked through.
  5. Add the cooked bacon and shredded cheddar cheese to the egg mixture, stirring until the cheese is melted.
  6. Warm the flour tortillas in a separate pan or microwave.
  7. Divide the egg and bacon mixture among the tortillas, adding optional ingredients if desired.
  8. Roll up the tortillas to form burritos and serve warm.
