  • 1 cup corn kernels (fresh or frozen)

  • 1 teaspoon chili powder

  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the diced butternut squash, black beans, corn, cumin, chili powder, and garlic powder.
  3. Warm the corn tortillas in a skillet or microwave to make them pliable.
  4. Spoon the filling into each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. Pour the enchilada sauce over the rolled tortillas and sprinkle with cheese if using.
