Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 225 grams fresh strawberries, diced
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon balsamic vinegar
  • 0.5 teaspoon honey (optional)
  • Pinch of salt

Instructions

  1. In a bowl, mix balsamic vinegar, olive oil, minced garlic, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. While the chicken is marinating, prepare the strawberry basil relish by combining diced strawberries, red onion, chopped basil, balsamic vinegar, honey (if using), and a pinch of salt in a separate bowl.
  4. Heat a grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  5. Once cooked, let the chicken rest for a few minutes before slicing.
  6. Serve the sliced chicken topped with the strawberry basil relish.

Notes

  • For best flavor, marinate the chicken for a longer period if possible.
  • This dish pairs well with a side of quinoa or a fresh salad.
  • Adjust the sweetness of the relish by adding more or less honey according to your taste.
