Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crusts in the mini pans.
  7. In a separate bowl, combine diced apples, cinnamon, and brown sugar.
  8. In another bowl, mix oats, flour, and softened butter to create the topping.
  9. Layer the apple mixture on top of the cheesecake batter, then sprinkle the oat topping over the apples.
  10. Bake for 20-25 minutes or until the cheesecakes are set.
  11. Let cool before removing from pans and serving.
